White Chicken Chili Soup Mix

Maggie’s White Chicken Chili Soup Mix (Large) 

Available in large (8 cups)

Preparation instructions (large size) - Items needed:

4 oz. of sour cream

3/4 cup whipping cream

Chicken (optional-canned, rotisserie, cooked or turkey)

 

Combine contents of soup pouch and spice packet with 8 cups of water.  Bring to a boil, then simmer for 20 minutes.  Add 8 oz. cooked chicken at any time.  In a separate sauce pan mix together and heat 4 oz. sour cream and 3/4 cup whipping cream.  (It is ok to substitute with "light" sour cream and either milk or fat free half & half).  10 minutes before serving, slowly whisk the cream mixture into the hot soup mix.  Remove from heat and cool slightly.

 

Suggestions:  add a can of diced chili peppers to the mix.

 

Dehydrated beans make this soup ready in 20 minutes. Add dairy products for smoothness.  Feel the cumin create the heat.
