Peanut Butter Cookie Mix

 

Preparation instructions - items needed:

1 cup butter - room temperature

1 egg plus 1 egg yolk

1 Tbsp vanilla

1 cup peanut butter

 

Preheat oven to 325°. Empty the entire bag into a large bowl. Remove the sugar packet. Cream sugars in another bowl with the butter only until smooth. Add peanut butter, egg(s) and vanilla. Mix for 1 minute. Add remaining dry ingredients and mix until combined.

For large cookies (makes 3 dozen) use a 2-tablespoon scoop. For smaller cookies (makes 6 dozen) use a 1-tablespoon scoop. Roll the scooped dough into a ball and place on the cookie sheet. Flatten crisscross style with fork. Dip in flour or sugar if fork sticks to dough. Bake 12 to 14 minutes, or until golden brown. Let cool on baking sheet for 3 minutes before moving to cooling rack. Makes 3 or 6 dozen cookies, depending on scoop size.
