Coffee Cake Mix

Kelle's Coffee Cake Mix

 

Preparation instructions - items needed:

8 Tbsp butter (1 stick)

2 eggs

1 tsp vanilla

3/4 cup sour cream

 

Topping:  Use a pastry cutter or fork to cut 3 Tbsp cold butter into the small topping packet.  Set this bowl aside.

 

Cake:  Beat the remaining 5 Tbsp cold butter in mixing bowl until smooth.  Add dry ingredients and mix until combined.  Add 2 eggs, 1 tsp vanilla, and 3/4 cup sour cream.  Mix thoroughly.  Spread into prepared 9" x 9" pan.  Sprinkle topping evenly over top of the cake.  Bake at 350 degrees for 40-45 minutes or until toothpick inserted in center of cake comes out clean.

 

Option:  Add 1 cup fresh blueberries or apples.  Walnuts can be added to topping before sprinkling.

 

A moist, crumble topped coffee cake that is exactly what you need for breakfast.  Best when it comes out of the oven!
