Margaret's Apple Cider Muffin Mix
Preparation Instructions - items needed:
3 Tbsp butter
1/3 cup oil
1 egg
1 medium apple (peeled & chopped)
1 cup apple cider (can substitute 100% apple juice)
5 Tbsp butter for coating
Empty contents of large bag into a large bowl. Add 3 Tbsp melted butter, oil, egg, chopped apple & apple cider to dry ingredients. Mix by hand. Use non-stick spray on muffin pan. Fill each 2/3 full. Bake 17 minutes at 400 degrees for 12 muffins or 8 to 10 minutes for mini. While baking, melt 5 Tbsp of butter. Place in a shallow bowl. Empty the sugar/cinnamon packet into another bowl or plate. While muffins are still hot, dip one muffin top at a time in the butter. Then immediately dip muffin top into the sugar/cinnamon mix. Set on cooling rack or enjoy warm!
Option: Use extra 1/2 stick of butter to the 5 Tbsp and roll entire muffin in butter and sugar/cinnamon for a "donut" effect.
A moist, apple cider muffin that will make you feel warm all over! Best with cider, but can also use 100% apple juice if cider isn't in season yet. These yummy muffins can be made in a 12 muffin pan or to share more can be made in a mini muffin pan. The package will make approximately 36 - 42 mini muffins. What a fun surprise to bring to an event and so easy to make. Best when warm from the oven!
