Happy September!

Here I am, so excited that the weather will start to cool off, and here we are in a week of WAY above average temperatures. OMGoodness Mother Nature, enough already! Now that my complaining is done, I hope all you warm-weather lovers are enjoying this extended summer and are able to have some fun this Labor Day weekend!

We use holiday weekends for big maintenance in buildings and all those little things that need to be done “some day”. Hopefully we can check most things off the list this weekend!

Check out our classes at our new Quilt Shop as we start holding them on Tuesdays and Saturdays throughout this fall. Click HERE to see the list. We will also be doing a Sit n Sew every Thursday there for $1/hr, 11am to 4pm. Please call the 2nd Quilt Shop to register and pay for a class, and to register for the Sit n Sew day, 810-818-5225

Also, we will be hosting National Jelly Roll day at the 2nd Quilt Shop on Saturday, September 19, 11am to 4pm. Snacks and drinks provided. Please register and pay $10 ahead to hold your spot, 10 people maximum. You will learn techniques, do make and takes, and have access to lots of 2 ½” strips there that day to use. If you have registered and paid ahead of that day, you will receive 15% off all purchases in Quilt Shop 2 that day. Call 810-818-5225 to register!

Sew What's Cooking? With Jenn 

Cottage Cheese Egg Bites

Ingredients

  • 7 Eggs
  • 1 cup Cottage Cheese
  • 1 cup Shredded Cheese
  • 1 cup Diced Ham or Bacon
  • Salt and Pepper to taste
  • Cooking Spray

Steps

1.      Preheat oven to 325.

2.      Combine eggs, cottage cheese, shredded cheese, and meat choice in a mixing  bowl. If you like a creamier texture, you can combine the eggs and cottage cheese in a blender before adding your other ingredients.

3.      Ladle into a 12 cup muffin pan that has been greased. If you have a silicon muffin pan, greasing is not necessary and they do not stick at all.

4.      Place muffin pan on the top rack of your oven and place a pan of water on the lower rack. This will help your muffins be moist and creamy.

5.      Bake for 25 – 35 minutes based on your oven. Egg cups should be set and a toothpick should come out clean when checked.

6.      Let them cool in the pan for 10 minutes then remove and let them finish cool on a rack.

Storage

I store them in a Tupperware container in the refrigerator. When ready to enjoy, 30 – 45 seconds in the microwave.

You can really add any of your favorites. Some suggestions:

  • Bacon
  • Spinach
  • Bell Peppers
  • Onions
  • Red Pepper Flakes
